Coconut Strawberry Popsicles

Summer is literally almost over and fall is only a month away. I recently bought a popsicle mold to make my kids popsicles because my husband and I have actually started to avoid all foods with high fructose corn syrup.
We both decided that we would not be feeding our kids anything that had that ingredient. Surprisingly that ingredient was in most of the snacks that I would normally purchase for my kids. We have since then completely changed their snacks. Thankfully our kids didn't mind the change and have been very good about not wanting to eat them either. Popsicles in the stores are full of ingredients you can't even pronounce. So the best thing that I can do is take the time to make them homemade popsicles and be aware of what goes into the popsicle mold. I am aware that in some recipes sugar will be necessary but this way I determine how much sugar I want to use. For this recipe I used only four ingredients. Ingredients: (Makes 6-8)
  • 4-5 Strawberries (Frozen or Non-Frozen)
  • 1 can of Coconut Milk
  • 1/2 cup of shredded Coconut Flakes
  • 1/8 cup of La Lechera Sweet Condensed Milk
Directions: 
  1. Blend all ingredients in your blender until smooth. (You may add a splash of water if it looks a little thick, I did) 
  2. Pour into popsicle mold. 
  3. Freeze (3-4 hours) and enjoy!
Additional Info: 
I only used 4-5 strawberries because I wanted the color to be more white. You can use more strawberries if you'd like the color to be more pink.
