
Prep Time: 10 minutes | Cook time: 20 minutes | Total time: 30 minutes | Servings: 10-12 pancakes
Ingredients:
For the pancake mix
- 2 eggs
- 2 tbsp vegetable oil
- 1 1/4 cup milk
- 1 1/2 cups flour
- 2 tbsp sugar
- 3 tsp baking powder
- 1 tsp salt
For the apple topping
- 2 gala apples, diced
- 1 1/2 tbsp butter
- 1 1/2 tsp sugar
- 2 tsp brown sugar
- Cinnamon to taste
- 1/2 cup of pecans
Directions:
- In a mixing bowl whisk the eggs, vegetable oil, and milk.
- In a separate bowl sift the flour, sugar, baking powder, and salt.
- Slowly add the dry mixture to the wet mixture and mix well.
- Add butter to your griddle or non-stick pan.
- Heat to medium high heat.
- Pour 1/4 cup batter onto the griddle for each pancake. Cook for about 1-2 minutes until it begins to bubble or the edges are golden brown.
- While the pancakes are on the griddle heat up a pan to medium heat.
- Add the butter, sugar, brown sugar, and cinnamon. Stir it for about 30 seconds.
- Add the diced apples to the sauce and cook for about 5-7 minutes until soft.
- Serve your pancakes, add the apple glaze on top, sprinkle some pecans, and drizzle them with syrup and enjoy!
